ChefHe began his career in Zarautz, and later he toured other parts of the Basque Country, made home in Madrid and finally embarked on the adventure of opening his own restaurant, Arce, in 1988, to show the full value of the northern cuisine and to bring in the new and modern elements that the “new Basque cuisine” was introducing into its traditions.
From his cooking stand above the pursuit of excellence in using the best raw material and preparing a menu tailored to each client. The passion for his work and his desire to make every guest to enjoy with the products make the move for his restaurant to be a unique moment and that leaves no one indifferent.
In the end, as he says, “when you give everything you have cannot give more”.
His passion for the stove and the kitchen came to him since he was a child. He began working attending the service of the tables at the family restaurant, and afterwards he continued his apprenticeship at the Cooking School of Carlos Arguiñano and after that he ventured over kitchens from UK and the Netherlands for years.
Back in Spain, the desire to learn and master from traditional cuisine to the latest cutting-edge techniques led him to share kitchen with great friends and chefs like Elena and Juan Mari Arzak (three Michelin stars), the Roca brothers (Celler de Can Roca, three stars Michelin) and Martin Berasategui (Lasarte, seven Michelin stars).
Member of the Spanish selection of professional cuisine, an association dedicated to represent Spanish cuisine and compete; he was awarded by ACYRE as Madrid best cook in 2015
Our house awaits you near the center of Madrid, next to the Gran Via and the Plaza de Chueca. Here we are waiting with open doors and willing to do enjoy with tastes.
