He began his career in Zarautz, and later he toured other parts of the Basque Country, made home in Madrid and finally embarked on the adventure of opening his own restaurant, Arce, in 1988, to show the full value of the northern cuisine and to bring in the new and modern elements that the “new Basque cuisine” was introducing into its traditions.
From his cooking stand above the pursuit of excellence in using the best raw material and preparing a menu tailored to each client. The passion for his work and his desire to make every guest to enjoy with the products make the move for his restaurant to be a unique moment and that leaves no one indifferent.
In the end, as he says, “when you give everything you have cannot give more”.

Born in Marbella and having finished his studies at Les Roches Marbella, he started training at the Four Seasons hotel chain, both in London and Lisbon. There he decided that his journey in the hotel trade would be dedicated to restaurants.
He was working in Marbella Club Hotel Golf & Spa and Kabuki Raw at Finca Cortesin before landing at Arce, where he observed a year ago the unique way of doing the usual hotel business in this times, especially the passion which customers are being served by offering everything in your measure, attention and commitment. That is what has encouraged the continuity of the project.

Born in Madrid, he determined that studying wasnot for him and decided to look for a motivation which he found at 17 years old when he arrived in Arce.
Unai Camba took him as an apprentice, who Iñaki assigned him to.
Little by little he learned and continues to do so. This labor has steeped him.
With sacrifice, commitment and dedication, without leaving the past and believing in the future, he continues in this project for the next 30 years.
